Recipe: Honey Grilled Pork

Main Dishes - Pork, Ham
HONEY GRILLED PORK

1 pork loin roast
FOR THE MARINADE:
1/2 cup honey
1/2 cup Dijon mustard
1/4 cup olive oil
6 cloves garlic minced
4 tablespoon fresh rosemary or more
salt and pepper to taste

Pierce roast on all sides and place in a zip-lock bag; set aside.

Place marinade ingredients in a blender and blend; pour over roast in bag. Close bag and refrigerate, turning frequently, about 12 hours.

Preheat grill.

Remove pork from marinade. Pour marinade into a small saucepan, bring to a boil and simmer 2-3 minutes; set aside.

Start roast on hot grill, about 15 minutes, to char outside. Turn heat to low, cover and grill1 1/2 hours, covered.* Baste frequently with marinade. Remove from heat, allow to rest 10 minutes.

Slice and serve.

*If you have fresh rosemary throw a couple sprigs on the coals as you grill...smells wonderful.
