Recipe: Dutch Sauerkraut Roast (using pork roast)

Main Dishes - Pork, Ham
DUTCH SAUERKRAUT ROAST

2 pound pork roast
Salt and pepper to taste
Shortening
4 cups boiling water
2 large cans sauerkraut, drained and rinsed
Mashed potatoes or potato dumplings (for serving)

Rub roast with salt and pepper; brown in shortening.

Place sauerkraut over meat; add boiling water and seasonings to taste. Cook until meat is tender, keeping enough liquid in pot to cover kraut. Stir often to keep kraut from sticking to pot.

Serve with mashed potatoes or potato dumplings.

Makes 8-10 servings
