Felicia, this is from a famous Canadian cook. I think every recipe comes with a story attached! I used to make this years ago, and I have pulled it out for you from a well-thumbed-and-splattered-with-use cookbook.

PORK CHOP AND APPLE STEW
4 pork chops
1 medium onion, thinly sliced
2 apples, cored and sliced crosswise
oil
1 cup apple juice or cider
1 bay leaf
1 tsp salt
1 tsp dried basil or thyme
cheese
Brown the chops quickly over high heat in a little oil.
Add the onion and fry over medium heat. Remove the meat and onions from the pan and keep warm. Add some more oil and fry the apples until they're light brown. Dust with cinnamon.
Layer the apples, meat and onions in a casserole, baking dish or frypan. Add the apple juice or cider, bay leaf, salt and basil or thyme.
Bake for 45 minutes with the lid on tight. Then cover with cheese and broil until brown and bubbly.
