Recipe: Pork Chop Sauerkraut Casserole and Baked Pork Chops with Sauerkraut for John

Hi John:-) Here are two recipes for you to consider. I found these on the internet so have not tried either one. There are some other recipes listed here at recipelink that you can look at by typing "pork chops and sauerkraut" in the "Find a recipe " box. There are some using a crock pot if that might be your preference for the cooking method.

PORK CHOP SAUERKRAUT CASSEROLE

6 pork chops, 1" thick or thinner (may use country style pork ribs or Polish sausage)
1 (27 oz.) can sauerkraut
1 cup chopped onion
1 medium apple, pared, cored, chopped
2 tbsp. brown sugar
1 medium potato, pared & grated or diced

Combine the sauerkraut, onion, apple, brown sugar and potato in deep casserole.

Cut some of fat from edge of chops. Some people like the fat. Dip in seasoned flour. Brown lightly. Place on top of kraut mixture. Cover.

Bake at 350 degrees for 1 1/4 hours. Can be cooked in Dutch oven on top of stove too.


BAKED PORK CHOPS WITH SAUERKRAUT

6 pork chops
3 tbsp. drippings or oil
2 tbsp. mustard
2 tbsp. brown sugar
2 large apples, cored and sliced 1/2 inch thick
1 (16 oz.) can sauerkraut, rinsed
baking potatoes (optional)

Brown pork chops on both sides in drippings.

Blend mustard with brown sugar; spread on chops. Arrange apple slices over chops; cover with sauerkraut.

Bake, covered, in square casserole at 325 degrees for 1 1/2 hours or until chops are tender.

Bake potatoes in the oven at the same time.

Garnish with apple wedges if desired.
