Recipe: Pork Roast and Pineapple

Pork Roast and Pineapple

1 (about 3 - 4 lb) boneless pork roast
Soy Sauce
Garlic
Fresh grated or slivered Ginger

Pineapple Preserves (Hawaiian Plantation or Kukui brand --
this is NOT canned or fresh pineapple. This is rich and
thick like a jam.)

Marinate the roast in a plastic bag with the soy sauce, garlic (as much as
you can stand), and ginger at least overnight in the refrigerator, turning
the bag several times as you remember it. Roast in a 350 F oven for about
one and a half hours. Cover the roast with Pineapple Preserves and continue
cooking about another half hour until a meat thermometer registers 180 F.
Let cool at least five minutes. Slice and serve.
