HAM SLAW
FOR THE DRESSING:
2 eggs
2 tablespoons sugar
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/3 cup vinegar
1/3 cup water
FOR THE SLAW:
2 to 3 cups diced cooked ham
3 cups coarsely chopped cabbage
1 medium carrot, thinly sliced
1/4 cup chopped green bell pepper
1/4 cup chopped onion
Cabbage or lettuce leaves (for serving)
TO MAKE THE DRESSING:
Beat eggs. Add sugar, salt, black pepper, vinegar and 1/3 cup water. Cook slowly, stirring constantly, until mixture thickens slightly, about 2 to 3 minutes. Chill.
TO PREPARE THE SLAW:
Combine ham, cabbage, carrot, green pepper and onion. Add dressing and toss together lightly.
Serve in lettuce or cabbage-lined salad bowl.
Makes 6 servings
