A couple of suggestion for barbeque. Some of our favorite things to serve to a crowd is a combo of ribs and sausages. I boil both prior to cooking so they take little time on the barbie. I use large Italian sausages which seem to have more bite to them. Smother both in your favorite barbeque sauce and serve along with a simple hash brown potato casserole and a salad.

The other recipe I use a lot for crowds is a simple soulvaki made from pork. Marinate cubes of pork in lemon juice and olive oil (to cover meat - more lemon juice than oil - probably 2/3 to 1/3). Add lots of oregano and salt and pepper and cover. Refrigerate overnight - turn a couple of times if you think of it. Skewer and cook over coals. Use reserved marinade to keep the skewers from drying out. My husband likes to add a little more oregano to the final cooking. Serve with a greek salad, roasted potatoes and lots of good crusty bread. Serve it buffet style. Lots of wine goes great or a good beer!
