Recipe(tried): Basic Beef Zucchini Burgers and Suzi's BBQ Sauce
SandwichesADVERTISEMENT
Basic Beef Zucchini Burgers
An easy basic burger, the grated zucchini adds a touch of green.
500 grams (1 lb) minced (ground) beef
1 small onion, grated or finely chopped
3 small zucchini's grated
1 tsp grated ginger (or out of jar)
1 tsp soy sauce
1 tsp olive oil
1 egg yolk (or egg)
1 teasp sundried tomato paste
1/4 cup breadcrumbs (more if stretching quantity)
If a little 'wet' add more crumbs. If dry add another egg. Hard to predict with the moisture in the zucchinis.
Put in large bowl and use hands to combine. Shape into small patties, flattern slightly and refrigerate. Oil the grill. Cook turning once.
Suzi's Bbq Sauce
Make up a large batch and put in a bowl or jug with whatever you serve, great on burgers. Also par boil some sausages, wrap in a slice of bacon, secure with a toothpicks and just finish on the grill.
2 tsp oil
1 small onion, finely chopped
1 tbsp brown malt vinegar
1 tbsp brown sugar
1/3 cup tomato ketchup
1 tbsp Worcestershire sauce
2 tsp soy sauce
Heat the oil in a small pan, fry the onion till soft. Add the rest, bring to a boil and simmer 3 minutes, stirring. Serve warm or at room temperature. Cover and keep in the fridge. I usually double it.
Enjoy Suzi.
