Recipe: Potato Bread (LF) (bread machine)

Potato Bread (1 1/2 lb. loaf)

This makes a wonderful crunchy braided bread or two french loaves when baked in the oven. It is also good as a crusty pizza.

2 3/4 cups whole wheat flour
1/4 cup vital wheat gluten
2 tablespoons instant mashed potato flakes
1 tablespoon turbinado sugar
1 teaspoon salt
1 tablespoon tofu
1 1/2 cups water
2 teaspoons active dry yeast

Put first five ingredients in a bowl and stir until well mixed. (The reason is that vital wheat gluten hardens into lumps if not mixed with
the flour.) Place the ingredients in your automatic bread maker and bake according to the manufacturer's directions.

Tip:
Make several batches of the dry ingredients and place in small plastic bags. Freeze for use later.

Variations:

Oven Baked:
Take pan out of bread machine and punch the dough down. Cover and let rest 5 minutes, then shape as desired. Let rise until doubled. Brush with Starch Glaze and sprinkle with seeds if desired. Bake in 350 degree oven about 40 minutes or until lightly brown.

Starch Glaze: Mix 1/2 C water with 1 tsp. cornstarch in small pan. Stir and cook until thickened.

Raisin Apple loaf:
Add 1 teaspoon cinnamon to the dry mix. Use 3/4 cup water and 3/4 cup apple juice concentrate. Add 1 chopped sweet apple, 1/2 cup raisins,(and chopped nuts if desired) during the last half of the kneading process. Can be baked in the bread machine or in the oven. (It may burn on the edges if made in the bread machine.)
