Recipe: Old Fashioned Vegetable Soup (with ground beef)

OLD FASHIONED VEGETABLE SOUP

1 lb. ground beef
1 cup chopped onion
1 cup diced raw potatoes
1 cup sliced carrots
1 cup sliced celery
2 cans (16 oz. each) whole tomatoes, cut coarsely
5 cups water
1 tbsp. salt
1/4 tsp. basil, crushed
1/4 tsp, thyme, crushed
1 bay leaf
1/4 tsp. ground black pepper
2 tbsp. instant beef bouillon
1 (7 oz.) can whole kernel corn, undrained
1 (8 1/2 oz.) can sliced green beans, undrained
1 (8 1/2 oz.) can small sweet peas, undrained

Brown ground beef and onion until meat is slightly browned; drain.

Add remaining ingredients except corn, beans, and peas. Simmer 30 minutes or until raw vegetables are tender.

Add canned vegetables and continue heating 5 minutes.

Makes 11 cups
