Recipe: Danish Meat Balls with Mashed Potatoes

DANISH MEAT BALLS WITH MASHED POTATOES

2 lbs. ground lean beef
3 tbsp. instant minced onion
2 tsp. salt
1/4 tsp. ground black pepper
1/2 tsp. ground nutmeg
2 eggs, beaten
2/3 cup flour
1/4 tsp. salt
Dash ground black pepper
1/4 cup shortening
1 cup bouillon or water
1 bay leaf
Fluffy mashed potatoes (for serving)

Combine first 6 ingredients. Shape into 2-inch balls.

Mix flour with the 1/4 tsp. salt and dash ground black pepper into which roll the meat balls. Brown on all sides in hot shortening.

Add bouillon or water and bay leaf. Cover. Cook slowly 20 to 30 minutes. Remove meat balls; set aside and keep warm.

Blend 3 tbsp. flour with drippings left in pan (use flour left from the 2/3 cup). Brown the flour. Stir in 1 1/2 cups water or bouillon. Cook until medium thickness, stirring constantly.

Serve meat balls and gravy with fluffy mashed potatoes.

Makes 5-6 servings
