Recipe(tried): Preparing Green Beans for Freezing - Blanch only for a short while
Preserving - Other I always buy more green beans that I can eat, so most of the time, I would string them (if needed), break them into bite size portion, and throw them into slight salted boiling water for a few minutes. Then I dry them, bag them and freeze them. I haven't had any problems with mushy beans at all. Perhaps you're blanching them too long?
