Recipe(tried): Preserving ginger

I am not sure if you mean keeping it fresh for a few weeks or actually preserving it in jars to store. That I know nothing about. However, to keep it in the refrigerator for several weeks (or longer) peel, and put in a small glass container that has a tight fitting lid such as a screw top. Pour in dry sherry to cover the ginger, cap tightly and store in the refrigerator. When you need it, just cut off a portion and return it to the jar. The sherry picks up ginger flavor and I use it in some stirfries when dry sherry and ginger are ingredients. Just make sure to add more sherry to the ginger so it is submerged.
