Recipe(tried): 3-Cup Cobbler and Fried Corn Bread

My mom taught me this basic recipe for cobbler when I was young and I still use it today. Over the years, I've come to remember it as the "3-Cup Cobbler":

1 stick (1/2 cup) butter
1 cup sugar
1 cup self-rising flour
1 cup milk
sliced peaches (or other fruit)

I melt a stick of butter in a baking dish (I use a 9x13 dish) in oven on 350 degrees F.

As it is melting, I mix up the sugar, flour, and milk.*

Once the butter is melted, pour mixture into baking dish then place peaches (or other fruit) on top of mixture.

Bake until golden brown.

*My family likes a lot of crust so I sometimes double up on the mixture.

It's wonderful to serve warm with a scoop of vanilla ice cream.

As for the Fried Corn Bread, this may not be what you are looking for but we use the same corn bread recipe for baking corn bread only we fry it in oil/shortening like you would pancakes. A lot of people in our area call them "Corn Cakes" but growing up my family called them "Hoe Cakes".
