Recipe: Pumpkin Bran Muffins (using bran cereal and whole wheat flour)

PUMPKIN BRAN MUFFINS

2 eggs, slightly beaten
1 (16-ounce) can pumpkin
1/4 cup vegetable oil
1 cup skim milk
1/2 cup sugar
1 cup bran cereal
1 cup whole wheat flour
1 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons cinnamon
1 1/2 teaspoons ground cloves
1/4 teaspoon allspice
1/4 teaspoon ginger

Preheat oven to 350 degrees. Line or grease muffin tins.

In a large bowl, combine eggs, pumpkin, oil, milk, sugar and bran. Mix well.

In smaller bowl, stir together remaining ingredients and then add to pumpkin mixture. Do not overmix. Fill prepared muffin tins almost full.

Bake 30 minutes in 350 degree oven. Cool muffin pan on wire rack before removing muffins.

Makes 18 muffins
