Recipe: Walnut-Date Loaf (Hellmann's Mayonnaise, 1981)

WALNUT-DATE LOAF

"A tasty bread to spread with cream cheese."

2 1/2 cups unsifted flour
1 cup coarsely chopped walnuts
3/4 cup sugar
1 tablespoon baking powder
1/4 teaspoon salt
1 (8 oz) package chopped dates (about 1 1/4 cups)
2 eggs
3/4 cup water
1/2 cup Hellmann's or Best Foods Real Mayonnaise
1 1/2 teaspoons vanilla

Preheat oven to 350 degrees F. Grease and flour 9x5x3-inch loaf pan.

In large bowl stir together first 5 ingredients. Stir in dates; set aside.

In small bowl with fork beat eggs slightly; beat in remaining ingredients until smooth. Add to dry ingredients; stir just until moistened. Spoon into prepared pan.

Bake in 350 degree F oven 50 to 60 minutes or until cake tester inserted in center comes out clean. Cool in pan 10 minutes. Remove; cool on wire rack.

Makes 1 loaf
