How many do you have to serve is my big question?? I would make some things that are easy to freeze and soups. I have a great Chicken Spaghetti recipe and also King Ranch Chicken which freeze well, if you want it. Also, if you try these easy dishes:

Hot Chicken Salad
2 c cooked chicken
1 1/2 c. celery thinly sliced
1 c slivered almonds toasted
1 t. salt
1/2 c shredded cheddar
2 Tbl. accent
2 Tbl lemon juice
2 t. grated onion
1 c. mayonaise
1 c crushed pot. chips
Combine all ingredients except cheese & Chips. Place in oblong baker and cover with cheese and chips bake at 425 15 minutes or Make ahead and refridgerate leaving chips and chees off til ready to bake. If cold bake at 400 25 minutes.

Pasta E Fagiole Soup (EASY!!)
1 lb. ground beef
3 stalks celery diced
1/2 onion diced
3-4 garlic cloves minced
1 cab great northern beans
1 can kidney beans
1 can diced tomatoes
1 can tomato paste
1 can tomato sauce
1 c water
1 tsp chili powder
2 Tbl italian seasoning
salt & pepper
Sometimes I grate in a few carrots too for color.
Brown ground beef with onion and celery til clear. Drain fat, add tom. garlic.Open beans, drain and rinse. Add to pot. At tom. paste, water, & spices. Let simmer as long as possible to let seasonings meld. Freezable!

Chicken with Rice
4 chicken breasts (boiled & boned, diced)
1 box Uncle Ben's Original recipe Wild Rice box
1 can cream of celery
1 c mayonaise
1/2 c sour cream
1 can water chestnuts
1 small jar pemintos
1 small can mushrooms
Make rice according to directions. Add chicken mayo, sourcream, celery soup, pemintos, etc. blending well. Place in 10x13 baker and bake 30min. at350. Easy and enjoy!!
