Cooking ahead for guest
Misc.When I have that situation, I cook and freeze gumbos, spaghetti sauces, chili, taco filling, chicken-broccoli casserole, etc. I put them in the fridge the night before and when we get home, in most cases, it is a matter of making a salad, bread, rice or pasta and dinner is ready without a lot of work and rushing around.
For breakfast, a ham and cheese loaf or sausage-cheese loaf can be made ahead and frozen. I take frozen yeast bread dough, thaw and roll it out in a rectangle and spread with pan-fried diced ham (cooled) and cheese or cooked and cooled sausage and cheese. Roll up and shape in a loaf, let rise according to directions and bake. These can be made using the frozen rolls also.
