Quick and Simple Spaghetti Sauce

Got this recipe from a book called "Vegetarian Cooking for Everyone." It's very simple and quick, but excellent. Very good over angel hair pasta sprinkled with parmesan.

1 (28 ounce) can of diced tomatoes, drained
1/4 cup finely diced onions
1 garlic clove (I use more)
2-4 tablespoons olive oil or butter
Salt/pepper

Combine tomatoes, onion, garlic, and oil in skillet. Simmer 20-30 minutes, stirring occasionally, until excess water is cooked off and oil has separated. Season with salt and pepper.
