QUICK CHICKEN CACCIATORE
4 boneless, skinless chicken breast halves
2 Tbsp. olive oil
1 cup sliced mushrooms
1 cup sliced zucchini
1 (14 1/2 oz.) can CONTADINA Recipe Ready Diced Tomatoes
1 (8 oz.) can CONTADINA Tomato Sauce
1 tsp. Italian herb seasoning
Cook chicken in oil in large skillet over medium-high heat, 3 to 4 minutes on each side or until browned. Remove from skillet; keep warm.
Add mushrooms and zucchini to skillet; cook, stirring occasionally, 3 to 4 minutes or until tender.
Stir in undrained tomatoes, tomato sauce and Italian herb seasoning. Season to taste with salt and pepper.
Add chicken; spoon sauce over chicken. Simmer 15 minutes or until chicken is done. Serve with pasta or rice, if desired.
