Quick, tasty, & healthy grilled chicken wing meal

This is one easy meal to make and I hope you don't laugh

OK, whenever I am too busy with my computer business and do not have much time to fix a meal (coming back and forth from the kitchen and the office) for my hungry family. I will make this light grilled curry chicken wings. Yeah, you heard that right, it's a "fast curry chicken". I always make sure that I buy some chicken wings when go shopping on Saturdays because they are really versatile.

I will defrost some wings (about 10 wings for 3 adults). Cut the tips off and RESERVE them in a medium pot. Then separate the wings (from the joint) into 2 pieces each. Place them on a flat container then rub enough SALT (TO TASTE), CURRY POWDER (MORE), TURMERIC (LESS), WHITE PEPPER POWDER (JUST A DASH). This is just a guild line because I don't measure everything. You can add whatever spice you like. As long as the "color" looks lovely, it's done. If you are running out of time, you only need to marinate these wings for 10- 15 minutes before cooking. (if not, leave them in the fridge until needed.)

In the meantime, you add enough water to the pot (about 2 - 3 cups.) & add a dash of white pepper powder, about 1 t. salt. Covered, bring it to a boil then turn the fire down until needed. (If the stock threaten to dry up when you are too slow, just turn the fire off.)

Now you heat up the broiler/grill (the upper part of your oven) to high. Preheat the oven on high for about 10 minutes before grilling the wings.

While all these are happening, you can chop up some vegetables, such as broccoli (or Chinese broccoli), carrots, peas, corns and etc. Do NOT use soft, quickly cooked vegetables. (i.e. lettuce or bok choy)

Grill the wings each side for about 10 minutes (or until lightly, evenly charred) on high heat. Turing once while grilling.

When the wings are almost done, bring up the stock to high. Take out all chicken tips. Add in all vegetables and just poach them for a little while (until the color changes). Take the vegetables out and drain well. Place the vegetables on a serving plate and sprinkle with a bit salt and pepper or just a small amount of soy sauce. Mix well and it's ready to serve.

We normally eat the wings with boiled rice. (I will boil the rice before I start preparing the meal because I have a fast rice cooker.) But if you don't have time, while grilling the chicken wings, you can microwave the rice or simply serve the wings with bread rolls. (I have done that as well and it was good.) FANTASTICO!

And dessert? That's up to you! ^_^
