Recipe: Quinoa Brownies (using quinoa flour and rice flour, Bob's Red Mill recipe)

QUINOA BROWNIES

Scant 1/2 cup vegetable oil
4 1/2 ounces semi-sweet chocolate, chopped
2 eggs, room temperatures
1 teaspoon vanilla extract
3/4 cup quinoa flour
3 tablespoons rice flour
1 teaspoon baking powder
1/2 cup sugar

Preheat the oven to 400 degrees F. Lightly oil an 8-by-8-inch baking pan or dish.

Stir the oil with the chocolate in the top of a double boiler set over simmering water, until the chocolate is melted and the mixture is smooth. Remove from heat.

Beat the eggs and add to the chocolate, whisking vigorously. Beat in the vanilla and let the mixture cool until it's warm.

Combine the quinoa flour, rice flour, baking powder and sugar, then beat into the chocolate mixture to form a dough. Spread the dough into the prepared pan.

Bake for 10 to 15 minutes. Allow to cool then cut into squares.
