Recipe: Rainbow Cookies

Rainbow Cookies

1 margarine, softened
3/4 cup white sugar
3/4 cup brown sugar
2 eggs
1 tsp. vanilla
3 cups flour
1/2 tsp. soda
1/2 tsp. salt
Food coloring

Mix margarine, sugars, eggs and vanilla.

Blend flour, soda, and salt in separate bowl then add to first mixture.

Divide dough into 4 parts and add a different food color to each part.

Roll each color of dough into a strip about 4-inches wide and 1/4-inch thick. Stack the strips of dough together. Wrap the dough in wax paper and refrigerate overnight.

Slice the layer dough in 1/4-inch slices, gently curve the slice to make a rainbow arch.

Bake on an ungreased cookie sheet in 375 degree oven for about 7 minutes.

Yield: 3 dozen cookies
