Recipe: Java Crunch Cookies

Desserts - Cookies, Brownies, Bars
JAVA CRUNCH COOKIES

1 1/2 cups flour; all-purpose
3/4 cup butter; softened
1/2 cup sugar
1/4 cup brown sugar; firmly packed
1 egg
1 tbsp instant coffee
1 tsp baking powder
1/2 tsp salt
1 1/2 cups flaked coconut

Preheat oven to 350 degrees F.

In large bowl combine all ingredients except coconut. Blend well with mixer. Stir in coconut; mix thoroughly. Drop by rounded teaspoon onto ungreased cookie sheets.

Bake at 350 degrees F for 10 to 12 minutes. Remove from cookie sheets and cool on racks.

Makes 36 to 42 cookies
