INCREDIBLY EASY BORSCHT
For 2 people 1 c. tomato juice
1/2 c. beet juice (the liquid from a can of beets)
1 sm. cucumber, chopped
1 sm. can of beets, chopped
1/2 c. sour cream
Mix the juices together and swirl in the sour cream. Add the chopped cucumber and beets and salt and pepper to taste. Serve with a blob of sour cream on top. Best served cold.
