Hi, I am diabetic and have collected a very tasty library of recipes. If you are interested in more recipes please feel free to e-mail me at:

Sugar free Oatmeal cookies

1 Cup whole-wheat flour,
1 cup oatmeal,
1 teaspoon ground cinnamon,
1 teaspoon baking soda,
1/4 teaspoon ground nutmeg,
1/4 teaspoon ground allspice,
1/2 cup raisins,
1 cup unsweetened applesauce,
1/4 cup water,
1/3 cup vegetable oil
Combine ingredients well in bowl and drop on a greased cookie sheet.
Cook at 375 degrees for 10- 15 minutes. I wonder what would happen if
you added nuts?
Dutch Peach Crumb Bake
4 cups Peaches, sliced fresh or canned (lite)
2/3 cup Graham cracker crumbs
1 tsp. Cinnamon, ground
1/4 tsp. Nutmeg, ground
4 tsp. Margarine, melted
Layer peaches in bottom of an 8-inch square baking dish. Combine graham cracker crumbs, cinnamon, and nutmeg. Mixing well; blend in margarine. Sprinkle mixture over peaches. Bake uncovered at 350 degrees for 30 minutes. Serve warm.
Note: Four cups frozen unsweeten peaches, thawed, may be substituted for fresh peaches.
Ambrosia Pudding
1 pkg. (6 oz.) Sugar-Free Vanilla pudding, instant
2/3 cup Orange Juice
1 cup (9-oz. can) Crushed pineapple
1 cup Heavy cream, whipped
Vanilla Waffers (if you want you can know get sugar-free ones by Murray)
1/2 cup Cereal Flakes, crunched
Prepare pudding according to package directions. Using 2/3 cup orange juice for the liquid. Add pineapple. Fold in whipped cream. Divide into 6 serving bowls and place vanilla waffers around sides. Chill. Top with cereal flakes.
