Elegant Green Beans

ELEGANT GREEN BEANS

4 c. cooked green beans
1/2 c. chopped onion
3 tbsp. butter or margarine
2 tbsp. all-purpose flour
2 tbsp. sugar
2 tbsp. vinegar
1/4 c. snipped parsley
1 c. dairy sour cream
3 slices bacon, cooked crisp

Drain beans, reserving 1 cup liquid. Cook onion in butter until soft. Stir in flour. Stir in bean liquid, sugar, vinegar and parsely. Cook, stirring constantly, until thickened. Add sour cream and pour over the beans; heat through but do NOT boil. Crumble bacon over top. Makes 6 to 8 servings.

Hi Angela! Here are a couple of my favorite
green bean recipes:
Savory Green Beans
1-1/2 lbs. green beans (may use frozen)
1/4 c oil or butter (I use less!)
1 clove garlic, crushed
1 Tbs. chopped onion
3/4 c diced green pepper (can omit if you
are not fond of peppers)
1/4 c boiling water
1 tsp. salt
1 tsp. dried basil
1/2 c grated parmesan cheese
Leave the beans whole or cut into 1 inch
pieces. Heat oil and garlic in heavy pan.
Add onion and gr. pepper; cook slowly for
3 minutes. Add beans, water, salt and basil.
Cover and simmer about 15 minutes. until
beans are tender. Stir in half of the cheese.
Turn into serving dish and sprinkle with
the remaining cheese. Makes 6 to 8 servings
(You can easily cut this in half)

1 1/4 cups cut fresh green beans
2 teaspoons veg oil
1/3 cup water
1 teaspoon soy sauce
dash of ground ginger

In a saucepan, saute beans in oil over med. heat for 4 min. Add water. Reduce heat; cover and simmer for 15 min or until crisp-tender. Drain; toss with soy sauce and ginger.

Snap Beans and Potatoes

Amount Measure Ingredient -- Preparation Method

4 medium red potatoes, peeled and quartered -- (about 1-1/2 lb)
2 1/4 teaspoons salt -- divided
1 pound fresh green beans -- broken in 1-1/2"
3 bacon slices
1 large onion -- sliced
1/4 cup cider vinegar
2 teaspoons dried rosemary -- crumbled
1/4 teaspoon sugar
1/4 teaspoon freshly ground pepper

Cook potatoes and 1 tsp. salt in boiling water to cover in a large saucepan 10 min or until tender. Drain and rinse with cold water. Set aside. Cook beans and 1 tsp. salt in boiling water to cover in saucepan 3-4 min. or until crisp-tender. Remove from heat; plunge in ice water to stop cooking process. Drain and set aside. Cook bacon in a skillet until crisp; remove bacon, reserving drippings in skillet. Crumble bacon. Saute onion in hot drippings until crisp-tender. Stir in remaining 1/4 tsp salt, vinegar.and next 3 ingred. Add potatoes and beans; cook, stirring occasionally, until heated. Sprinkle with bacon.
