ORANGE-PECAN STUFFED ACORN SQUASH
2 acorn squash
1 tbsp brown sugar
1 tbsp butter or margarine
1/4 tsp salt
1/4 tsp grated orange peel
2 tsp orange juice (or as needed)
2 tbsp chopped pecans
Halve squash; remove seeds. Place, cut side down, on greased baking sheet.
Bake at 350 degrees F for 30-35 minutes or till squash is tender.
Scoop out pulp, leaving thin shell. Stir together pulp, brown sugar, butter, salt and orange peel. Add enough orange juice (about 2 tsp) to make fluffy consistency. Refill shells; sprinkle with pecans.
Bake 10 minutes more.
Makes 4 servings
