Recipe(tried): Re: Zucchini Recipe

Here is my favorite zucchini recipe. It's very colorful, especially if you substitute yellow summer squash for half of the zucchini. I like to serve this with rice - the juice is absorbed by the rice - yum!

Zucchini with Cherry Tomatoes (from "The Eastern Junior League Cookbook")

1 1/2 lbs. small zucchini
3 TBSP butter
1 tsp salt
1/8 tsp pepper
1 pint cherry tomatoes, halved
2 tsp lemon juice
1/4 tsp sugar

Wash but don't peel zucchini. Slice 1/2 inch thick. Place in skillet and add boiling water to cover. Cook, covered, until barely tender. Drain well. Return zucchini to skillet & add remaining ingredients. Toss gently, cover, & simmer until tomatoes are heated through. Do not overcook.
