Foolproof Rice In Crock Pot

What a crock pot can do with rice is unbelievable. The rice can literally cook for hours and stay perfect. Even after it's done it stays perfect if left in the pot.

1 C converted rice
2 C water
2 t salt
1 T butter

Place all ingredients together in crock pot , cover, and cook on low for 6-8 hours.

Tah Chin (Persian chicken with rice)

5 cups basmati rice
salt
2 1/2 pounds chicken breast or chicken pieces
1 medium onion -- quartered
1 teaspoon turmeric
3 1/2 lemons, juiced (use pulp too)
1/8 teaspoon pepper
4 eggs
1 3/4 cups yogurt
5/8 teaspoon saffron/ sugar dissolved in warm water
1/2 pound butter

Soak rice in salty water. Cook chicken in water with turmeric, onion, and 1/2 tsp. salt. When chicken is tender, take out and cool; cut in chunks. Marinade cooked chicken in lemon juice, pepper, and 1/2 tsp. salt. Let broth cook down to 1/2 cup.

Put water from soaking rice and additional water in pan and bring to boil. Add rice and boil till almost done. Drain in colander.

Mix 4 eggs, yogurt, and saffron/sugar. Melt 2/3 stick butter in pan from rice with 1/2 cup oil. Add about 1/2 of rice to this yogurt/saffron mixture, then start layering: yogurt/rice, chicken, yogurt/rice, chicken etc. ending with plain rice in non-stick pan. Cook till done (begin on medium heat then turn down to low). If it dries out, add more butter and water mixed together.

To serve: turn out on platter (like a cake) and cut into wedges. Crust should be golden. Serve with salad.

Serving Size : 6

6 chicken breasts
butter
3 cans (10 oz) cream of chicken soup
3 tablespoons celery flakes
2 tablespoons thyme -- rubbed
salt to taste
2 cups brown or yellow rice -- cooked
chicken broth

Rinse chicken and pat dry. Saute in butter in ovenproof skillet; remove to plate. Add soup to skillet, stirring to deglaze. Add celery flakes, thyme, and salt. Stir in rice. Arrange chicken over top. Bake at 350F for 30 minutes, adding chicken broth if needed for desired consistency.

Floretta Clifton's Broccoli and Rice Casserole

2 pkgs. frozen chopped broccoli
1 c. minced onions
1 stick butter
1 can cream of mushroom soup
1 c. shredded cheddar cheese
1/2 t. dry mustard
3 c. cooked rice
4 hard cooked eggs, chopped

Cook broccoli, drain. Saut onions in butter. Stir in soup, cheese, dry mustard, broccoli and rice. Add eggs. Turn into a buttered 2 quart casserole. Bake in oven at 350 for 20 minutes until heated through. Garnish with 1 (3 0z.) can of onion rings, if desired.

Majudarrah - Lebanese Lentils and Rice

An absolutely delicious dish,,,

Ingredients:

1 cup lentils
1 cup white or brown rice
2 medium to large onions, cut julienne style
2 garlic cloves, pressed
1/4 c. olive oil
salt and pepper to taste
1/2 t. allspice
1/4 t. cumin
3 1/2 c. water

A very simple but very delicious dish. The key is in the onions: peel and slice or dice them, then fry them slowly in some olive oil with the garlic until they are golden brown. They will shrink considerably, so always start with more than you think you need. If you're using white rice: Start by adding the lentils, water and salt and pepper in a saucepot and boil for 15 minutes, then add the rice, spices and onions and cover the pot and finish cooking by simmering for 20 minutes. If you're using brown rice, add it to the pot at the same time as the lentils. (Obviously, you can cook it much quicker if you use a pressure cooker--the brown rice version takes only 15 minutes once everything is in the pot. Just be sure to reduce the amount of water by 1/4 or 1/ 2 cup, since very little will evaporate.) When it's cooked, stir to mix in the onions (they'll all be on the top).
Serve with pita bread and Tzatziki (Cucumbers in sour cream with garlic) Wonderful with meat or chicken.

New Year Fried Rice

Serving Size : 6

3 Strips bacon, diced
3/4 c Chopped green onions and tops
1/3 c Diced red bell pepper
1/4 c Frozen green peas, thawed
1 Egg, beaten
4 c Cold, cooked white rice
2 tb Soy sauce

Cook bacon in wok or large skillet over medium heat until crisp. Add green onions, red pepper and peas; stir-fry 1 minute. Add egg and scramble. Stir in rice and cook until heated, gently separating grains. Add soy sauce; cook and stir until heated through. Serve immediately.

**STIR FRIED RICE**

(1) Prepare 2-4 cups of rice.(best if cooked ahead of time and refrigerated)

(2)Prepare one cup of cooked meat such as chicken, or fresh pork and set aside

(3)Scramble 2 eggs in butter and set aside

(4) Add chopped onion (to taste),1/2 cup of chopped cabbage, and 1/4 cup of chopped green pepper(any vegetables may be substituted.)

(5)Stir fry vegetables for about 15 minutes or until well cooked while adding 4 Tablespoons of soy sauce.

(6) Add rice and eggs and stir fry for 2 minutes or until well mixed.

(7) Serve Immediately. Makes 2 to 4 servings.
