Recipe(tried): Red Beans and Rice...

Menus
and Ham and Cheese Pie were made today with the last of our Easter ham. I think that we had ham every night last week, except for one.

I've posted the Ham and Cheese Pie many times and it is delicious. I made two pies today. We had one for supper and I will freeze the other one for another meal.

The red beans were prepared in the Crockpot, and the rice was made in the microwave.

RED BEANS AND RICE

1 lb. bag red beans
1 meaty ham bone
1 onion, chopped
2 cloves garlic, minced
1 box Zatarain's Red Beans Seasoning Mix

Put the red beans in a large pot and cover the beans with water. Let soak overnight. Look through the beans and discard any foreign material.

The next day, place the ham bone in a large Crockpot. Drain the water from the beans and pour into the Crockpot. Add the onion, garlic, and seasoning mix to the beans, stirring well. Cover the beans and ham mixture with cold water. Let cook for 8-10 hours. Serve over rice.

MICROWAVE RICE

In a microwave-safe bowl, microwave 5 cups of water for 10 minutes, or until water is boiling. Add 2 1/2 cups Uncle Ben's Rice and salt to boiling water. Cook the rice on HIGH for 16-18 minutes or until all of the water has been absorbed. Serve the rice with the red beans.
