Recipe: Red Beans and Rice (using instant rice, microwave)

Side Dishes - Rice, Grains
RED BEANS AND RICE

2 cups cooked kidney beans (or one 16-ounce can kidney beans, drained)
1 medium onion, chopped
4 green onions, sliced thin
1/2 cup grated carrot
1/2 cup chopped red bell pepper
1 tbsp. dried parsley
1 1/2 tsp. hot sauce
2 cups canned chicken broth
1 1/2 cups instant rice (Minute rice)

Combine all ingredients in a 2 1/2 quart casserole dish.

Cover and microwave on full powder 7-9 minutes. Let stand, covered 5 minutes.

Makes 8 servings
