Recipe: Red Cinnamon Pickles - Oh happy day !

Preserving - Pickles, Relishes
Here is your long lost recipe.

RED CINNAMON PICKLES

16 cups cucumbers, zucchini or apples
1 cup vinegar, 5 % acidity
Red food coloring
1 c. pickling lime* (sold with canning supplies)
1 gallon water
Ice
SYRUP:
1 cup vinegar 5% acidity
5 cups sugar
Whole cloves
1 pkg. red hots ( approx. 1 cup)
1 cup water
4 sticks cinnamon

Peel, core and de-seed fruit and cut into 1/2-inch slices. Soak in solution of lime and water for 24 hours. Drain.

Cover with ice water for 3 hours; drain.

Mix bottle of red food coloring with enough water to cover pickles. Simmer for 2 hours. Drain and discard water.

Make syrup and simmer until red hots are melted. Add fruit; bring to boil.

Put into jars and seal. Process pints in boiling water bath for 10 minutes.

*Be sure to rinse and rinse the lime off. When you work with it, be very careful as it can choke you up if you breathe any of the dust. Some people use a mask when working with it.

NOTE: You may use well-mature yellow cucumbers.
