RED VELVET CAKE WITH 7 MINUTE FROSTING
This cake is decadent in itself and adding the 7 Minute Frosting just puts a tuxedo on an already wonderful dish.
1/2 cup Crisco vegetable shortening
1 1/2 cups sugar
2 eggs
1 cup buttermilk
1 tbsp. vinegar
2 1/2 cups all-purpose flour
2 tbsp. unsweetened cocoa powder
1 tsp. baking soda
1 tsp. salt
1/4 cup red food coloring
1 tbsp. vanilla
Preheat oven to 350 degrees F. Grease and flour three layer cake pans.
Mix Crisco and sugar together. Add eggs. Mix in buttermilk and vinegar and set aside.
Mix flour, cocoa powder, baking soda, salt, food coloring and vanilla and set aside. Combine with the sugar mixture and pour into prepared cake pans.
Bake at 350 degrees F for 30 minutes. Let cake cool in pans for 10 minutes. Remove from pans and cool completely on wire rack.
When cake has cooled, fill and frost cake with Seven Minute Frosting.
SEVEN MINUTE FROSTING
2 egg whites
1 1/2 cups sugar
1/4 tsp. salt
5 tbsp. water
1 1/2 tsp. corn syrup
1 1/2 tsp. vanilla
Combine all ingredients in a double boiler and cook for seven minutes, beating with a mixer constantly. Remove and add vanilla. Beat one more minute.
