Recipe(tried): Refreshing Lemon Ice

Refreshing Lemon Ice

6 lemons
1 envelope unflavored knox gelatin
1 cup sugar
2 1/4 cups water
zest from 1-2 lemons

Squeeze juice from lemons to make 3/4 cup

In saucepan cook jello, sugar and water 2-3 minutes til dissolved. Remove from heat and add juice and zest. Put into a 9-inch baking pan and cover with foil. Freeze until firm for about 3-4 hours and take out of pan and beat with mixer to make smooth and creamy. Place back in freezer and let freeze again. I beat it just before we eat it to keep it smooth and creamy, but you don't have to.
