Recipe: Rhubarb Coffee Cake

Here is a great recipe for using rhubarb - and even those who don't like it, will never know what it is! My kids always thought is was made with apples!!

RHUBARB COFFEE CAKE

Cream together:
1/2 cup brown sugar
1 cup white sugar
1/2 cup margarine, softened
1 egg.

Combine:
2 cups flour
1 teaspoon baking soda
scant 1/4 teaspoon salt

Add ALTERNATELY to the above mixture with:
1 cup buttermilk or sour milk.

Chop rhubarb to make 2 cups, and then add to the above (can be beaten in for about 1 minute to mix in well). Pour into greased 13x9x2 pan.

Bake 30 to 45 minutes in a 350 degree F oven. You can add a sugar-cinnamon mix on top for the last 5 minutes if desired.
