Recipe(tried): Rib Eye Steak in the Skillet, Gorgonzola Potatoes, and Vegetable Saute

I've mentioned before how my local grocer, Publix, always features a meal of the week in their flyer and they have wonderful cooks cooking the meal in the store every week. Well, this week they are featuring standing rib roast because of the holiday season. The gal explained to me that she can't cook an entire rib roast in her electric skillet, she has to make the rib eye steak.

Oh my, what an enticing aroma and the steak had a beautiful color to it and tender....oh, it was divine! They give out the recipe card and all you do is purchase what you need from the refrigerated case behind her. No need to run all over the store gathering your goodies, it's all there. Well, I figured if that girl can cook all those three items one at a time in her elctric skillet, I can cook it on my stove top too! I also discovered KERRYGOLD Garlic & Herb butter from her. This is found in the butter section. Each stick costs $1.79 and is worth every cent! I plan to use it in my Smashed Potatoes for Christmas dinner. You can also use to flavor sauteed veggies. A very good thing!!

It was a quick meal, I would say it cooked and was on the table in under 30 minutes. Very fast and delicious!

Here are the recipes to the dinner we enjoyed last night!


RIB EYE STEAK IN THE SKILLET
serves 2

1 rib eye steak

Season it with garlic powder and Lawry's seasoned salt.

Spray your skillet with PAM and over medium heat; cook the steak til done to your liking. The steak releases delicious juices, so I cut up a slice of onion and sliced 4 button mushrooms to put into the pan and cook along with the steak.


GORGONZOLA POTATOES

3/4 cup crumbled gorgonzola cheese
1 cup half and half
1 tsp. salt
2 Tbsp. flour
2 Tbsp. garlic butter (I used KERRYGOLD)
1 (20 oz.) package refrigerated home-style sliced potatoes
1/4 cup French Fried onions,
pepper to taste

Combine in a microwave proof bowl: cheese, half and half, salt, and flour. Add butter and microwave on HIGH for 2 minutes or until hot.

Stir in remaining ingredients. Cover and microwave on HIGH 10 minutes, stirring once or until potatoes are tender.

Before serving, garnish with French Fried onion ring bits.


VEGETABLE SAUTE

1 (16 oz.) bag frozen Roma blend vegetables
1 (12 oz.) jar fried peppers and onions
salt and pepper to taste
1 Tbsp. garlic butter

Saute all ingredients 2-3 minutes over medium heat in a pan. Reduce to medium-low, cover and simmer 5-7 minutes til tender.
