QUICK TOMATO SAUCE
1 large onion, finely chopped
2 teaspoons chopped garlic
2 teaspoons olive oil
4 cups chopped ripe tomatoes
1/2 cup chopped fresh basil
Salt and pepper (to taste)
In large nonstick skillet over medium heat, cook onions and garlic in oil about 5 minutes, until softened.
Stir in tomatoes and basil. Season with salt and pepper. Cook over medium-high heat, stirring often, about 10 minutes, until tomatoes have softened and sauce is piping hot.
VARIATIONS:
- Cook a half-pound ground beef or turkey and add to sauce.
- Or add peeled and deveined shrimp, fresh or frozen, and simmer until shrimp turns pink.
Makes 3 cups
