Recipe(tried): Roasted Shallot Vinegarette (Like Cosi's)

I believe that you are referring the to the roasted sherry shallot vinegarette on the signature salad. I have attempted my own version of this.

ROASTED SHALLOT VINEGARETTE (LIKE COSI'S)

1/4 cup red wine vinegar
2 or 3 tbsp oil
chopped shallots (roast shallots in the oven until tender)
2 or 3 tsp of sugar
1/4 to 1/2 tsp of salt

Blend in a food processor until smooth.

I usually don't measure my ingredients, I just add them until they taste right. Let me know what you think.
