Recipe(tried): Roasted Vegetables with Fresh Sage

Roasted Vegetables with Fresh Sage

2 tbsp. soft margarine (30 mL)
1 Tbsp chopped fresh sage (15 mL)
1 clove garlic, minced
1/2 pound Brussels sprouts (225 g)
1/2 pound parsnips, peeled and cut in 2-inch pieces
4 oz baby carrots (112 g)
1 small butternut squash, peeled, and seeded and cut in 2-inch pieces.

Preheat oven to 375 degrees F (190 C)

Melt the margarine in a small saucepan, then stir in the sage and garlic. Put all the vegetables in a large roasting pan and pour margarine mixture over. Toss to coat vegetables evenly. Bake, uncovered, for 25 to 30 minutes or until vegetables are tender, stirring and turning occasionally to allow the veggies to brown evenly without sticking. Serves 4. Per serving 66 calories..2 g Fat
