Recipe(tried): Tuna Sauce

Tuna Sauce

8 oz. chicken stock
2 tablespoons onion, chopped
2 teaspoons dried basil
1(16 oz.)can tomatoes and juice
2 cans (6-/12 oz. each) water-packed tuna
salt & pepper to taste
2 tablespoons fresh parsley, snipped

Heat stock in skillet. Add onion and saute for 3-4 minutes.

Add basil and stir. Add tomatoes and mash with wooden spoon to make a thick sauce. Stir in tuna, salt and pepper. Simmer, uncovered, 2-3 minutes.

Add parsley and cook another 6-8 minutes.

Serve over macaroni or thin noodles.

We tried this recipe on March 15, 2004, before Lent. It is so easy to prepare and tastes good. We were very surprised! Our tuna is usually served in a filling for sandwiches. Enjoy!
