Recipe: Ruby's Low Carb Cheesecake

The Ruby Tuesday Low-Carb Cheesecake is made with a sweetener called Maltitol (not Splenda). The crust is a nut based crust, but almonds are only one of the many nuts used. If you go to your local Ruby's, they'll sell you a whole cheesecake with the ingredient list right on the box!

NANCY'S NUTTY CRUST

This crust is similar to the nut crust served with Ruby Tuesday's low carb
cheesecake.

1 1/2 cups finely ground pecans (find pecan meal in many supermarkets)
1/4 cup Splenda
1/2 teaspoon cinnamon
1/4 teaspoon guar gum or xanthan gum (optional but it helps it stick
together better)
4 tablespoons melted butter

Pat it into springform pan and bake it for about 10-12 minutes at 350 degrees before putting filling in Pam sprayed springform pan.
