SAN ANTONIO SHRIMP AND SHELLS SALAD
2/3 cup Pace Picante Sauce
1/3 cup mayonnaise
1/4 cup chopped fresh cilantro
3/4 teaspoon ground cumin
2 1/2 cups cooked medium shell macaroni (about 2 cups dry)
1 medium green bell pepper, cut into 2-inch-long strips (about 1 1/2 cups)
2 green onions, sliced (about 1/4 cup)
1 pound medium shrimp, cooked, peeled and deveined
1 1/2 cups cherry tomatoes cut in half
In small bowl mix picante sauce, mayonnaise, cilantro and cumin.
In large bowl toss macaroni, pepper, onions, shrimp and picante sauce mixture until evenly coated. Refrigerate at last 2 hours. Stir in tomatoes.
Makes 6 servings
