Recipe: Satay Udang (Dancing Prawns)

SATAY UDANG (DANCING PRAWNS)

4 Serrano red chilies, seeded and sliced
4 tbsp cilantro roots
1 3/4 tsp paprika
3 garlic cloves, peeled and minced
2 tbsp brown sugar
2 tbsp fish sauce
3 tbsp lemon juice
2 tbsp Indonesian soy sauce, (optional)
3 tbsp corn oil
2 lb jumbo shrimp, (about 32)

In food processor, blend chilies, cilantro, paprika, garlic, brown sugar, fish sauce, lemon juice and Indonesian soy sauce. Process until mixture forms a paste.

Transfer to a bowl and stir in oil. Let shrimp marinate in paste 15 minutes.

Grill or sear the shrimp for 2 minutes on each side or until they turn pink. Place each shrimp on a 6-inch skewer and serve.
