ALBACORE FETTUCCINE
4 cups broccoli florets (or one 10 oz. pkg. frozen broccoli cuts)
1/2 lb. fettuccine, uncooked
1 can (12 1/2 oz.) or 2 cans (6 1/8 oz. each) Starkist Solid White Albacore Tuna in spring water, drained
1 cup part skim ricotta cheese
1/3 cup grated Parmesan cheese
1/2 cup low fat milk
1/2 tsp. garlic salt
1/2 tsp. dried Italian seasonings
Salt and pepper (to taste)
In a large pot of boiling water, cook broccoli until crisp-tender. Remove broccoli with a slotted spoon to serving bowl.
Add fettuccine to same pot of boiling water, and cook until tender. Drain and add to broccoli. Stir in StarKist Albacore.
In same pot, combine remaining ingredients, stirring until sauce is smooth and heated through. Season to taste with salt and pepper.
Pour sauce over pasta mixture and toss.
Makes 4-5 servings
