Recipe(tried): Saturday Supper for Two: Pork Pizzaiola and Baked Mashed Potatoes with Parmesan and Breadcrumbs
MenusI've been battling pneumonia for the past two weeks & yesterday finally had enough energy to cook a nice dinner for DH & I. I'd watched the Food channel & these recipes from the Everyday Italian show with Giada De Laurentis seemed like the perfect comfort food for a cold winter night. The bonus was that the house smelled delicious!
PORK CHOPS PIZZAIOLA
2 Tbsp. olive oil
2 large bone-in center-cut pork chops, trimmed
1 medium onion, halved and sliced thin
salt & pepper
1 tsp. Herbs de Provence
1/4 tsp. dried red pepper flakes
1 (15 oz) can diced tomatoes in juice
1 Tbsp. chopped fresh Italian parsley
Preheat oven to 400 degrees F.
Brown chops in skillet in hot oil until golden; remove and keep warm.
Add onions to pan, salt and pepper, and cook until crisp-tender. Season with the herbs and red pepper flakes.
Add tomatoes. Place chops back in pan and spoon tomato mixture over to cover. Place skillet in oven bake at 400 degrees F for 20 minutes or until tender.
Serve with parsley sprinkled over top.
BAKED MASHED POTATOES WITH
PARMESAN CHEESE AND BREADCRUMBS
4 mediumn russet potatoes, peeled & cubed
1/2 cup whole milk, warmed
1/4 cup melted butter
salt and pepper to taste
3/4 cup shredded mozzarella cheese
3/4 cup shredded parmesan cheese, divided use
1 tbsp. butter
2 tbsp. dry plain breadcrumbs
2 tbsp. melted butter
Preheat oven to 400 degrees F. Butter an 8-inch baking dish.
Cook the potaoes in boiling salted water until tender.
Drain potatoes and add milk and 1/4 cup melted butter; mash until smooth, beat in salt and pepper to taste.
Fold in the Mozzarella and half of the Parmesan cheese. Spread into prepared baking dish and cover with topping mixture of the remaining Parmesan cheese, breadcrumbs and 2 tbsp. melted butter.
Bake at 400 degrees F about 20 minutes, until golden brown and bubbly.
NOTES:
*I cut the potato recipe down and found it still gave us 4 servings. The potatoes are very, very yummy!
**I served the pork chops and potatoes with fresh broccoli, steamed until crisp-tender and tossed with garlic butter.
I hope you enjoy this meal as much as DH & I did.
