Recipe: Sausage Bundt Cake (using applesauce, dates and pecans, 1980's)

SAUSAGE BUNDT CAKE

Recipe was the 1st place winner in the 1980
Mid-Cities TX newspaper holiday cookbook contest.

1 pound Country Sausage, uncooked (like Jimmy Dean)
3 cups brown sugar, firmly packed
1 egg, beaten
1 cup applesauce
3 1/4 cups flour
2 tsp baking soda
3 tsp baking powder
2 tsp cinnamon
1 tsp nutmeg
1/4 tsp salt
2 tsp vanilla extract
1 cup black coffee, strong
1 cup chopped pecans
1/2 cup raisins or chopped dates

In a bowl, mix sugar with sausage. Add egg. Mix well. Add applesauce. Mix well.

In another bowl, sift flour and other dry ingredients together.

Mix vanilla with coffee in a cup.

Add dry ingredients to sausage mixture alternately with coffee/vanilla. Beat well.

Add chopped dried fruit and nuts. Mix well. Pour into well-greased Bundt or tube pan.

Bake in a 350 degree F oven for about 1 1/4 hours. Cake is done when top springs back.

Makes 1 Bundt or tube cake
