Recipe(tried): Sausage Gravy

We LOVE sausage gravy in Virginia. Comfort food at its best! Try this:

1 lb. ground pork sausage (I use the spicy kind)
4 T. Flour
3 C. milk (use part 1/2 and 1/2 for a real treat)
Salt and pepper to taste

Brown ground sausage in a large dutch oven. Then, over medium heat, add the flour, stirring it in with a fork works best. You want to incorporate all of the flour into the sausage and rendered fat, so that there are no large lumps. Only cook the sausage and flour misture for about a minute, stirring constantly. Then, all at once, add the milk. Wisk the milk in, so that no lumps form. Then, increase heat to high, so the mixture reaches the boil. This will cause it to thicken. Continue wisking. Boil for a short time, maybe a minute or two, then decrease the heat to low. Add salt and pepper to taste. If the gravy is too thick, thin it with a little milk. If too thin, leave it over low heat for a little while, and it will reduce and thicken. If you don't like the thickness of this recipe, alter the flour/milk ratio next time (More flour= thicker, more milk = thinner). It is great over biscuits/toast or even pancakes.
