Hi - One of the best ways to fry summer squash is really just to saute it.
Cut the squash in circles or lengthwise, whichever you prefer. Season with lemon pepper or just pepper.
Take a good skillet and add a couple of turns of olive oil. Let it get hot, about 1 minute. Put the squash in and let saute until done - you will be able to tell, when it is limp.
You can do the same thing on a gas grill.
Cut the squash lengthwise, season with olive oil and lemon pepper. Heat grill.
Lay squash on grill at medium heat, for about 3 minutes (each grill heat is different). Turn and complete cooking.
This is great - and low fat. Wonderful with a salad and good for you.
