APPLE-FILLED SWEET POTATOES
2 cans (16 ounce) sweet potatoes
2eggs
1/4 cup butter or margarine, softened
2 tablespoons brown sugar
1 teaspoon vanilla extract
1/2 teaspoon ground nutmeg
FOR THE APPLE FILLING:
6 medium cooking apples, chopped
1/2 cup water
1 cup sugar
ground cinnamon (for sprinkling on top)
In large bowl with mixer at low speed, beat first 6 ingredients until just mixed. Increase speed to medium; beat until mixture is light and fluffy. On lightly greased cookie sheet, spoon potato mixture to make 8 mounds (about 2/3 cup for each mound), about 2 inches apart. With back of spoon, make a depression or well in each mound, forming a 4-inch round shell. Set aside
In small saucepan over medium heat, heat apples and water to boiling. Reduce heat to low; cover and simmer 8 to 10 minutes until apples are fork-tender; gently stir in sugar until sugar is melted. With slotted spoon, place well-drained apples in center of potatoes and sprinkle with cinnamon.
Bake in 400 degrees F oven 20 minutes or until golden brown. Remove potatoes with pancake turner to serve.
